Abstract
Real-time PCR is now an accepted analytical tool within the food industry. Its principal role has been one of assisting the legislative authorities, major manufacturers and retailers to confirm the authenticity of foods. The most obvious role is the detection and quantification of GMOs, but real-time PCR makes a significant contribution to many other areas of the food industry, including food safety and other speciality analyses such as the detection of common wheat adulteration in pasta and the detection of allergenic species.
